Announcement of the brand new chef: Solé Miami
The Solé Miami, a Noble House Resort in North Miami, is centrally located on Sunny Isles Beach and named California-born Nick Miller Executive Chef of the boutique resort by the sea. Chef Miller has worked in renowned restaurants on the West Coast (USA), including Noble House Hotels & Resorts’ Kona Kai Resort & Spa in San Diego, Portofino Hotel & Marina in Redondo Beach and L’Auberge in Del Mar operating for the globally inspired restaurant BALEENkitchen, Liquid Liquid Bar Lounge on site and management of all catering, in-room dining and special events.

Inspired by the creativity of fusing different cultures through the kitchen, Chef Miller began his journey into the culinary industry at the age of 15, working in his family’s restaurant where his parents first met. Miller learned various skills along with his brother and continued to thrive with various jobs. From catering for luxury weddings and events, to handling back-of-house warehouse sales, to being a sous chef and reaching his current home in the Noble House.
“Growing up in the restaurant business, I’ve seen how food can bring people together, from farm to warehouse to prep and table presentation,” said Chef Nick Miller. “Guests care about what they eat, and culinary innovation and education are key. For my next chapter with Solé Miami, my goal is to create a memorable dining experience and a place that the community gathers in Sunny Isles Beach. Although the BALEEN kitchen is located in a hotel, it is a real gem. “
